Found a few recipes I sort of combined and modified to come up with this. Whisk milk mixture and pour into wok. In small bowl, whisk together stock, soy sauce, cornstarch, sesame oil, vinegar, sugar and hot pepper sauce. Steps to make Beef and Greens:
  1. If you are going to eat this with something, like rice, start it at an appropriate time so it is ready at the same time.
  2. Mix meat and marinade, set aside
  3. Mix sauce ingredients, set aside
  4. Clean greens,.
  5. Cut into about 1 inch lengths, separate leaves from stems
  6. Dice onion, I'm using a spring onion because I had some on hand
  7. Into a skillet, wok or stir-fry pan, put about a tablespoon of oil, medium high heat. Put meat in, cook it until just done. Take it out, set aside.
  8. Put pan back on heat, add more oil, put garlic and onion in. Stir fry 1 minute.
  9. Add stems from greens.
  10. Stir fry about 2 minutes until the stems are bright green, time depends on thickness of stems.
  11. Add the leaves
  12. Stir fry until wilted and cooked down
  13. Add meat back in
  14. Stir fry for 2 minutes, just to heat it through
  15. Add sauce to center of pan
  16. Stir fry 2 more minutes to heat and thicken sauce.
  17. Add some rice into a bowl
  18. Put beef & greens on top to serve

If yellow beets are available, double the recipe using a bunch of red and a bunch of yellow, they're gorgeous! I think these go especially well with pork or chicken.
