In a large skillet over medium heat, heat oil. Sprinkle the green peppers and cheeses down the center of the tortillas; add jalapeno if desired. Add a tablespoon of cheese and roll the tortillas closed. Place the filled tortillas, seam-side down, on the prepared baking dish.

  3. Take out the tortillas. Add a good spoonful of sauce onto each one. Fold up and add to baking tray. Add sliced tomatoes on top and sprinkle with grated cheese
  4. Pop in the oven for about 8 mins. Sprinkle with oregano and serve

Heat olive oil in a saucepan over medium high heat. Add ground beef, green chiles, salt and pepper, to taste. Spoon meat, a little grated cheese, a little black olives, and green onions in the center of tortilla. Roll up and place, seam down, in baking pan. Pour extra red sauce over enchiladas.
