- In a pot boiled your beef till soft and tender and keep aside,retain the stock from the meat since you will use it incooking
- In a large pot out oil,give it 2minutes and add the chopped onions saute for 5 mins then add in garlic and ginger cook till fragrant but not burnt.
- Add in the curry powder cook for 1minute then add the chopped tomatoes and tomato paste cook until it makes a smooth paste
- Now add the meat that you kept aside cook it for 5 minutes to infuse the flavours
- Add in the bananas and keep on stirring
- Cook for 5 minutes or until the bananas start to become soft,now add in stock and the precooked garden peas check the seasoning and cook for further 3 minutes to avoid overcooking the bananas
- Check your seasoning and enjoy your meal
Matoke is also the name given to a delicious, rib-sticking plantain stew that is a Ugandan national dish. Matoke are shorter than ordinary bananas. They appear to be thick at the midsection due to their shorter-than-average length. The peel is green in color when they're unripe, which is the state in which they are most commonly used.
