- Use this rice to make rolled sushi or chirashi-zushi. This is an eho-maki roll filled with salmon, mayonnaise, avocado, lettuce, and atsuyaki-tamago (a thick egg crepe).
Most recipes we've found use lots of sugar and even vinegar. We like a more mild taste, but feel free to play around with this one to your liking. Perfect sushi rice consists of separate grains that are chewy—not mushy—and yet stick together, making it easy to form the rice into balls and rolls.
